I am leaving the following recipe on here just in case you didn't see it before this weekly update. :)
Brandi gave me a recipe called Turkey Thai Skillet that I tried and it was seriously fabulous!! THANKS BRANDI! It will be going into our dinner rotation for sure! I wanted to share it with everyone on here and tell you all that you need to give it a try... even my two picky eaters loved this!! (Drew Manning from "Fit 2 Fat 2 Fit" shared this recipe.)
Turkey Thai Skillet
1 lb lean ground turkey
1 LARGE red bell pepper (or 2 small)- sliced thin
2 Tbsp fresh ginger
3 cloves garlic
1 tsp red pepper flakes
3 Tbsp peanut butter
2 Tbsp lime juice
2 Tbsp soy sauce
1 Tbsp sesame oil
1/2 C. cilantro- chopped
8 romaine lettuce leaves
~Brown the turkey in skillet or wok; drain any grease. Add peppers, ginger, garlic and red pepper flakes. Cook over med-high about 4 minutes or until peppers have softened slightly.
~~Meanwhile, whisk together peanut butter, lime juice, soy sauce, sesame oil and cilantro. Remove the skillet from heat and add the PB mixture to the skillet; mix well. Serve the meat mixture rolled up in the romain leaves or over chopped lettuce.
***I don't like cilantro to overpower the rest of my food so I only put half of the cilantro called for into mine and I left out the red pepper flakes. Also, next time I make this I will be doubling the recipe!***
